Malt Whisky and the 'Duke'

History of the Duke of Gordon
It was thanks to The Duke of Gordon, after whom the hotel is named, that we enjoy Scottish whisky in the form we do today. In 1823 he sponsored the excise act in Parliament and it was this act which legalised the production of whisky but the story of whisky stretches much further back than this, back as far as the 15th century.
The earliest documented record of distilling in Scotland occurred in 1494 in the tax records of the day, the Exchequer Rolls.
An entry lists “Eight bolls of malt to Friar John Cor wherewith to make aqua vitae.”
Friar John was in luck – this was enough malted barley to produce almost 1,500 bottles of a potent spirit which would be refined and improved in the years ahead.
The increasing popularity of Scotch attracted the attention of the Scottish Parliament, looking to profit from the fledgling industry. The first taxes on Scotch were introduced in 1644 which led to an increase in illicit whisky distilling across Scotland.
Smuggling became standard practice for the next 150 years. The excise men, or gaugers, as they were known, and the illicit distillers began a game of cat and mouse, with canny Scots coming up with increasingly ingenious ways of shielding the spirit from taxation. Even usually honest members of the clergy would hide Scotch under the pulpit, and the illicit spirit was even transported by coffin to avoid the taxman!
By the 1820s, as many as 14,000 illicit stills were being confiscated every year, and more than half the whisky consumed in Scotland was being enjoyed without the taxman taking his cut.
One of the most well-known tax collectors of the 18th century was Robert Burns - Scotland’s bard. He trained as an excise man before turning his attention to writing some of Scotland’s most loved poetry. In 1785, Burns wrote “Scotch Drink” - an ode to whisky and the nature of happiness - of community, cooperation, warmth and a friendly welcome - and his points went to the true spirit of Scotch.
The continued flouting of the law eventually prompted the Duke of Gordon, on whose extensive lands some of the finest illicit whisky in Scotland was being produced, to propose in the House of Lords that the Government should make it profitable to produce whisky legally.
In 1823 the Excise Act was passed, thanks to the Duke of Gordon, which sanctioned the distilling of whisky in return for a licence fee of £10, and a set payment per gallon of proof spirit. A tenant of the Duke of Gordon, George Smith, was the first to be granted a license to produce malt whisky in 1824 whereby he founded Glenlivet, the first legal distillery.
Smuggling died out almost completely over the next decade and, in fact, a great many of the present day distilleries stand on sites used by the smugglers over two centuries ago.

The limited edition whisky was then matured in first fill bourbon casks, and treated to a finish in virgin white oak.

£5.25A terrific single malt all the way from Orkney. Rather full with a pleasant depth. Lurking somewhere in the substratum a grilled orange lies. Notes of granary toast and green tea with jasmine. A touch of sweetness. (Measure: 25ml)

Inchgower 14yo Flora and Fauna
£7.15The only generally available distillery bottling from Inchgower, usually a key part of the Bell's blend. It's also not one that independents see much of, so this is one of your only chances to try the output from this quietly elegant distillery. (Measure: 25ml)

Isle of Harris - The Hearach
£7.00Whisky from the Isle of Harris is here! The Hearach single malt whisky is made using soft Outer Hebridean waters from the Abhainn Cnoc a ’Charrain, which runs over the oldest rocks on earth, and 100% Scottish Concerto barley that was lightly peated at 12-15ppm using peat cut by hand at 'Cleite Mhòr', an area of South Harris where peat has been harvested for generations. This Scotch also benefits from a long fermentation that runs for up to five days, as well as maturation for at least five years in three cask types, Fino butts, first-fill bourbon, and oloroso sherry casks.

Isle of Harris - The Hearach Oloroso
£7.50The lightly peated (12-15ppm) whisky is entirely matured in first-fill oloroso sherry butts, as you might have guessed from the name, sourced from the respected Bodega José y Miguel Martín in Andalusia, Spain. The Hearach Oloroso Cask Matured is bottled at 46% ABV, with no colour added, and non-chill filtered. The below tasting note comes from Harrison Wood, blender at the Isle of Harris Distillery.

Isle of Raasay Single Malt
£5.80It's the flagship single malt from the Isle of Raasay Distillery, the first legal distillery to operate on the eponymous island. Peated and unpeated Raasay spirits are individually matured in a combination of rye whiskey, chinkapin oak, and Bordeaux red wine casks, before being married together for this exceptional dram. Taking influence from the older styles of Hebridean single malts, this expression is lightly peated, with a fragrant balance of dark berries and delicate smoke – superb stuff from the young distillery.

Laphroig 10yo
£4.85Really smoky and iodine rich. This has to be one of Scotland's most characterful drams. With a hint of vanilla ice cream and more than a whiff of notes from the first aid box. The oak is big, and muscles its way into the fore as you hold this whisky over your tongue. (Measure: 25ml)

Loch Lomond 14yo
£6.2514-year-old single malt from the Loch Lomond distillery, matured in American oak and finished in Limousin oak casks. Expect a fruit-forward dram here, with plenty of apple and citrus in there along with helpings of runny honey, soft cinnamon, and a gentle smoky note.

Lochlea
£5.00A big, exciting step for the young Lowlands-based Lochlea distillery. Our Barley is the first single malt to join the distillery's core range! Following the popularity of its Single Malt First Release, the Lochlea team set about creating this expression for all to enjoy. Matured in a combination of ex-bourbon and ex-Oloroso sherry casks, as well as shaved, toasted and re-charred barriques, the whisky was bottled up without any added colour, or chill filtration.

Macallan 12yo Sherry
£6.50It has spent its entire maturation in sherry-seasoned oak casks from Jerez. Medium-body and quite firm. There are notes of hot pastries and marmalade, sultanas and peels with a developing sweetness from the barley sugar. (Measure: 25ml)

Macallan 22yo (Gordon & MacPhail)
£33.00Distilled at Macallan in 2004, this single malt spent 20 years maturing in a single first-fill sherry hogshead. The cask was cracked open by Gordon & MacPhail in 2024, releasing a total of 331 cask-strength bottles for the Speymalt collection.

£8.75Aged in hogsheads (more than 50% larger than normal bourbon barrels) that have previously held maturing whisky. Smoky, creamy palate with notes of marmalade, toffee apples and pear cider. A development of cloves comes late palate. (Measure: 25ml)

£5.00Matured in ex-sherry casks for 12 years, this rich, elegant Tamdhu holds aromas of cinnamon rolls, orange candy, fresh oak, raisins and faint traces of mint. The palate offers notes of banana, raspberry jam, malty biscuits and toasted oak, before developing into ground cinnamon, dried fruit and Scottish tablet flavours that linger in the finish. The Hearach single malt whisky is made using soft Outer Hebridean waters from the Abhainn Cnoc a ’Charrain, which runs over the oldest rocks on earth, and 100% Scottish Concerto barley that was lightly peated at 12-15ppm using peat cut by hand at 'Cleite Mhòr', an area of South Harris where peat has been harvested for generations. This Scotch also benefits from a long fermentation that runs for up to five days, as well as maturation for at least five years in three cask types, Fino butts, first-fill bourbon, and oloroso sherry casks.
